ingredients:
1 large papaya
2-3 honey bananas (or 1 burro banana)
1-2 dates (optional)
topping options:
pumpkin seeds
sunflower seeds
4-6 almonds, chopped
dried cranberries
1 date, chopped finely
1 strawberry, cubed
instructions:
soak dates (if using) in warm water until soft & mushy.
blend dates & bananas in a high-speed blender until it reaches a soft, smoothy-like consistency.
cut papaya in half, lengthwise & scoop out the seeds. ensure papaya is placed sturdy in a bowl where it will not turn over.
pour blended mixture into half of the papaya and add toppings as suggested above or any other nuts, seeds or fruits based on your preference.
ENJOY!
notes:
if you have any nut butter such as almond, cashew or tahini available you can also drizzle this over everything once you have finished adding your toppings.
to get the blender going with the bananas, you can add a very small amount of coconut milk or use some of the water you used to soak the dates.
