ingredients:
½ cup sunflower oil (coconut or avocado oil can also be used however you will get a more pronounced flavor)
¼ cup aquafaba
¼ teaspoon pink salt
1 teaspoon distilled vinegar
flavor options:
add approximately ¼ teaspoon of mustard powder for a ‘spice’ taste
add about 1-2 teaspoons of maple syrup/agave for a sweeter mayo
add dried herbs such as parsley, dill or basil
instructions:
add all ingredients into a high-speed blender.
blend the mixture until it thickens & becomes white & fluffy.
store in an airtight glass container/jar.

notes:
allow the mayonnaise to thicken in the refrigerator before use for best results.
